Chilli Con Carne

Wholesome and warming Chilli Con Carne, perfect for cooler evenings. Serve with rice or thick crusty bread.

Here is how:

  • 2 Tbsp Olive Oil
  • 2 Onions, chopped
  • 2 Garlic Cloves, crushed
  • 1kg Minced Beef
  • 2 x 400g Chopped Tomatoes
  • 3 Tbsp Tomato Puree
  • 2 Red Chillies
  • 1 Tbsp Ground Cumin
  • 1 Tbsp Ground Coriander
  • 1 Beef Stock Cube
  • 2 x 400g Red Kidney Beans
  • Salt and Pepper to taste

How to:

  1. Heat the oil in a large pan with a lid. Fry the onion and garlic until softened. Add the minced beef and cook until the mince has browned, make sure you break down any large chunks of meat.
  2. Add the tinned tomatoes, tomato puree, fresh chilli, herbs and crumble in the stock cube. Season with salt and pepper. Bring to a simmer, cover with the lid and cook on a low heat for about 50 minutes.
  3. Add the kidney beans and cook for a further 10 minutes, uncovered.
