Chilli Con Carne
Wholesome and warming Chilli Con Carne, perfect for cooler evenings. Serve with rice or thick crusty bread.

Ingredients:
- 2 Tbsp Olive Oil
- 2 Onions, chopped
- 2 Garlic Cloves, crushed
- 1kg Minced Beef
- 2 x 400g Chopped Tomatoes
- 3 Tbsp Tomato Puree
- 2 Red Chillies
- 1 Tbsp Ground Cumin
- 1 Tbsp Ground Coriander
- 1 Beef Stock Cube
- 2 x 400g Red Kidney Beans
- Salt and Pepper to taste
How to:
- Heat the oil in a large pan with a lid. Fry the onion and garlic until softened. Add the minced beef and cook until the mince has browned, make sure you break down any large chunks of meat.
- Add the tinned tomatoes, tomato puree, fresh chilli, herbs and crumble in the stock cube. Season with salt and pepper. Bring to a simmer, cover with the lid and cook on a low heat for about 50 minutes.
- Add the kidney beans and cook for a further 10 minutes, uncovered.
