Ingredients:
- 20 Plum Tomatoes
- 20 Garlic Cloves
- 472ml Red Wine Vinegar
- 256g Caster Sugar
- 2 tbsp Ground Ginger
- 2 tbsp Salt
- 2 tbsp Paprika
- 1 tbs Cayenne Pepper
- 1 tsp Mustard Powder
- 1 tsp Cloves
- 8 Star Anise
- 1 tbsp Ground All Spice
How to:
- Cut the tomatoes in half, remove the seeds and roughly chop.
- Combine all of the ingredients in a pan and cook slowly over a medium heat until the mixture is thick and about 90% of the liquid has been reduced, this should take about 40 minutes. When the mixture starts to look shiny, it's ready.
- Allow the mixture to cool slightly then remove the star anise and as many cloves as you can find.
- Blend until its completly smooth.
- Pop into jars and store in the fridge. Can be kept in the fridge for 3 months if stored correctly. Sealed and sterilized jars.
