The perfect summertime pudding. It tastes even better when the fruit is in season!

- 600g Strawberries
- 2 tbsp Icing Sugar
- 600ml Double Cream
- 1 Giant Meringue
- Place half the fresh fruit in a blender with half of the icing sugar. Pulse to form a smooth puree. Half or quater the remaining berries.
- Whip the double cream and remaining icing sugar together until it forms soft peaks.
- To assemble: Crumble most of the meringue into bowls (Save a little to put on the top). Pour over the cream and pureed berries. Fold togther but don't completely mix. The colours will form swirls, this is when it's perfect. Sprinkle over the remaining meringue and the rest of the fruit.
